Memorial Day Cookout Favorites

Gearing up for the summer holidays ahead often involves lots of meal planning for all the barbeques, parties and family gatherings that will take place. With lots of focus on food during the season, it can be easy to get carried away with all of the tempting options. Try serving these delicious, yet healthy, versions of two cookout favorites this Memorial Day: burgers and potato salad.

Greek Turkey Burgers with Tzaziki Sauce

Turkey Burgers
1 lb extra lean ground turkey
½ cup crumbled reduced fat feta cheese
1 teaspoon dried oregano
½ teaspoon garlic powder
Salt and freshly ground black pepper to taste
Whole wheat buns

These burgers are lean, but pack lots of flavor! Mixing feta into the burger keeps it moist and reduces the need for more unhealthy options like cheddar or swiss. Mix the ground turkey with feta cheese and seasonings just enough to combine evenly. Be careful not to over mix the meat as that will create a tougher burger. Form roughly 4, 4 oz. patties from the mixture and cook over a grill or hot skillet for 3-4 minutes per side. Toast the whole wheat buns and lather them with Tzaziki sauce (recipe to follow) before assembling the finished burger.

Fat Free Tzaziki Sauce
1 cup fat free Greek yogurt
Juice of ½ medium lemon
1 medium cucumber, peeled and finely shredded
3 large cloves garlic, finely minced
Salt and freshly ground black pepper to taste

This Greek staple is a tangy, satisfying alternative to mayonnaise and cheese – two of the most unhealthy burger toppings. Begin by finely shredding your cucumber and wrapping it in a paper towel to squeeze out the extra moisture. Mix cucumber into the Greek yogurt, stirring in lemon juice, minced garlic and seasoning with salt and pepper as you go. Allow the mixture to sit for at least an hour for flavors to meld, although overnight is ideal.

Pesto Potato Salad
1 bag of small red potatoes
2 cups of fresh basil leaves
½ cup grated parmesan cheese
½ cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste
