This time of year, pumpkin shows up in the ingredient list of every meal of the day. That’s great for senior nutrition, because the familiar orange gourd is brimming with vitamin A. Get in the fall spirit with these yummy pumpkin recipes.

Pumpkin Soup
This treat is great for cold evenings. It works as an entire light meal by itself, or it can serve as an appetizer for dinner.

Ingredients

  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1/2 tsp. chili powder
  • 1/2 tsp. cumin
  • 15 oz. pumpkin puree
  • 1 cup milk
  • Black pepper
  • Green onion

Directions

In a saucepan, heat vegetable broth with the onion and garlic. Cook until the onion is tender, then add the chili powder, cumin and pumpkin. Simmer for 5 minutes while stirring occasionally. Add milk and cook until hot, but don’t let it boil. Serve with black pepper and green onion to taste.

Pumpkin Pecan Bread
Baking keeps your home warm on those cool autumn afternoons, and the resulting bread is savory and moist.

Ingredients

  • 1/4 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 3 1/2 cups flour
  • 1 1/2 tsp. salt
  • 1 tsp. ground nutmeg
  • 2 tsp. baking soda
  • 15 oz. pumpkin puree
  • 4 eggs
  • 2/3 cup water
  • 3 cups sugar
  • 1 1/2 cup chopped pecans

Directions

Heat oven to 350 F. Prepare your 7-by-3-inch loaf pans by either lining them with foil or lightly coating them in grease and flour. In a mixing bowl, whisk together the ginger, cinnamon, cloves, flour, salt, nutmeg and baking soda. Stir in the pumpkin puree, eggs, water, sugar and pecans, then pour into the pans. Bake for 50 minutes.

Pumpkin Alfredo
This recipe might sound a little unusual, but like butternut squash, pumpkin goes surprisingly well with pasta.

Ingredients

  • 1 box of pasta
  • 3 garlic cloves, minced
  • 1 small onion, chopped finely
  • 1 Tbsp. olive oil
  • 15 oz. pumpkin puree
  • 1/2 tsp. nutmeg
  • 1 cup cream
  • 1 cup grated Parmesan cheese

Directions

Boil a pot of water and cook pasta according to the directions on the box.

In a pan, saute the garlic and onions in olive oil for 1 minute. Add pumpkin, nutmeg, cream and cheese, and cook until the cheese is melted, stirring as needed. Drain the pasta and pour on the sauce as you serve it. Top with more cheese.

Roasted Pumpkin Seeds
This is a healthy snack that is easy to share.

Ingredients

  • 1 large pumpkin (for seeds)
  • Olive oil
  • Ground cinnamon
  • Sugar

Directions

Heat oven to 300 F. Remove seeds from the pumpkin, rinse with cold water, and pat them dry. Spread the seeds evenly on a sheet lined with aluminum foil or coated with oil. Roast for 30 minutes, remove them from the oven and toss with olive oil, cinnamon and sugar. Bake for another 20 minutes, or until seeds are golden brown.
